I think the Predator laughed because he understood the human concept of humor, which would be alien to predator (no pun intended).
I mean think about it, he's a high tech alien that was tricked by a log Dutch hung in a tree, just like Hawkin's ridiculous joke, the Predato understands he died in a ridiculous yet clever way.

The way I look at it, the Predator repeated the question that Dutch had asked as a way of saying that Dutch himself became like the Predator by turning the hunter into the hunted.
